What gets deleted
Right away and for good: your account (email, plan) and its usage and request history. Server backups that still contain it are deleted within 14 days.
The only thing kept is a one-way code (not your email) noting that the free trial was used, so it isn't handed out twice. A Google Play subscription is cancelled separately in Google Play → Payments & subscriptions. Data on your phone is removed by uninstalling the app or with Settings → Delete all my data.
